Psssst don't tell anybody, I give you the secret recipes of my mum...

plus a tip for a Bali cooking class.

Preparing spicy Sambal 

Ingredients 

10 small peppers (cabe rawit)
1 red pepper
1 small piece of trassi
5 small tomatoes
3 red onions (or white onion)
3 cloves of garlic
pinch of salt and pepper
teaspoon of white sugar (if you want)
2 tablespoons of (olive) oil

 

How to prepare sambal

* Cut everything into small pieces
* Heat the oil in a frying pan or casserole
* Fry all ingredients (without salt, pepper and sugar)  in the hot oil until slightly browned
* Then grind it finely with a little salt, pepper and sugar or mix it with in a blender!

Healthy snacks

This is so super easy, healthy and very tasty if you have a craving to have some snacks. You can buy these peanuts and or edamame at a local store and cook or steam them for at least 20 minutes.

Mie goreng Indonesian noodles

Pre-cook your favourite noodles (from 1 package)

Grind 6 candlenuts and garlic and fry it.

Add shrimp paste (half, pepper, and bouillon cube) in 4 tablespoons oil.

Fry the spice mix and onions.

Add Daun Salam and Ketjap Manis (sweet soy sauce), sesame oil, and/or fish oil (tiram sauce).

Add thinly sliced carrots and cabbage.

Add the noodles, with bean sprouts, leeks, and celery.

Add 3 tablespoons of ketjap Manis (soy sauce), salt, and pepper to taste.

Serve it with side dishes like: omelet or fried fish, cucumber and gherkins, or silver onions.

Sayur asem is one of my favourite vegetables dishes. It is a mix of sweet sour vegetables with peanuts. Check it out the next time you visit.

Durian fruit

Where and how to buy a durian. There are people who crave for it and there are others who feel they are going to be sick after just smelling the odor of this spectacular and also sharply discussed fruit. When it's the season you can buy durian at every street corner. Ask the seller to advice you and open it a little bit up to pre-taste if it is to your liking. Average price can be around 6 euro, depending on size and type.
